Since the end of World War II, steak has become a status symbol for Americans, a mandatory dish served at every celebratory meal for the last few decades.

Across the Pacific Ocean, China, which has seen enormous economic growth since the 1990s, is currently experiencing an increase in demand for beef. According to a report released by the USDA Office of Global Analysis last October, the Middle Kingdom has in the last five years become the world’s second largest beef importer (coming in just after the US) and the upward trend is expected to continue in 2017 and years to come. 

In our cover story (p42) this month, Food Editor Betty Richardson sums up what this all means for domestic and international beef producers vying for a slice of this big beefy pie, and more importantly, for the environment. In her own Eat & Drink section, she sits down for a sweet chat with Strictly Cookies Lexie Comstock (p59) to reflect on her experience in starting her own business in Shanghai, as well as her newly launched healthy cookies. 

In the Arts section, Zoey Zha and Tristin Zhang catch up with the cast of Wicked ahead of their Shanghai Culture Square shows from April 4 to May 14. In Life & Style, fashion columnist Timothy Parent highlights four industry trends to look out for this year (p26), while interior designer Baptiste Bohu shows off his Parisian-style apartment, which has been featured in many movies, TV shows and international publications (p24).

In the spirit of Valentine’s Day, the editors at That’s have put together a list our favorite alternative ways to celebrate February 14 (p9). But for traditionalists, turn to p62 to see some deals for oysters – nature’s aphrodisiac – to spice things up for the most romantic night of the year.
