Soundbite: Shanghai's New Duck King - Chef Sanji at the Peace Hotel

Soundbites are digestible pieces of new and gossip from Shanghai's food and drink scene.

There's a young guy in town bringing a new flavor to the traditional roast duck experience.

Sanji, a Shanghai native served in the People's Liberation Army before deciding his fate actually lay in the kitchen at Dragon Phoenix restaurant in The Peace Hotel.

Sanji developed a fascination with roast duck during his training and set about meticulously studying various techniques to improve the famed delicacy. Eventually he came up with his own unique way to make 'Peace Duck,' incorporating time-honored techniques from both Beijing and Guangdong; two places renowned for their roast duck.

But for Sanji, roast duck is more than a dish; it's a dining experience. Check out what he can do with his very large meat cleaver... (VPN on)

We are told Sanji's impressive movements are inspired by Kung Fu. Not bad at all.

So Sanji turns the presentation into an immensely fun and entertaining tableside show resulting in the crispiest more flavorsome duck we've ever tried.

He loves to interact with guests and is ready to share his knowledge of Chinese cookery. Plus, in true Shanghai style, Sanji's even set up his own Wechat account to interact directly Dragon Phoenix diners. You can reserve a 'Peace Duck' direct with the man himself, tell him about your tastes and preferences and he'll tailor a personalized experience just for you.

So whether it's Peace Duck or Sanji's WeChat details you're after, The Faimont Peace Hotel is where you'll find both.
