Sureño's Brioche-Focaccia Might Just Be the Best Complimentary Bread Ever

Everyone loves a basket of complimentary bread. Everyone loves a basket of multiple complimentary breads. But what about two complimentary breads, fused into one?

At Sureño, Chef Talib Hudda takes bread baskets to the next level with his brioche-focaccia – and yes, that’s brioche and focaccia in one. A unique blend of flavors and textures, this loaf offers diners both a twist on traditional European flavors and a science lesson.

To create it, Hudda combines both brioche and focaccia doughs at a precisely timed moment in their proofing process – the yeasts’ final rise before baking. And it doesn’t stop there: The result isn’t just served with butter, but with whipped olive oil.
