Taking place in Beijing, Hong Kong, and Shanghai for one night only (November 12), top restaurants across the city dedicate one table for 10 to the Chi Fan For Charity (sponsored by Epermarket) cause and put on a one-of-a-kind multi-course menu, which can be bought by any group of people. Afterwards, a legendary after party with free-flow drinks takes the celebrations long into the night.
This year’s line up is nothing short of stellar, including some of our favorite chefs and restaurants, from high-end classics and veteran chefs to up-and-coming movers and shakers. Over the next few days we'll be highlighting key dishes which will be featured on the menu of CFFC venues.

The Cannery
West Coast-style Clam Chowder
CFFC diners can enjoy Freddy Raoult’s cooking at The Nest’s sister restaurant, The Cannery. Having opened this year to much acclaim (and a 4/5 review in That’s), The Cannery brings seafood and fish to the fore, inspired by owner Mark Klingspon’s West Coast Canadian heritage.
In addition to scallop carpaccio, giant battered beach oyster, and slow-cooked shortribs with bourbon barbecue sauce, Raoult will also be featuring a hearty dish hailing from San Francisco: clam chowder with Canadian clams, pancetta and oysters. “In preparation for opening The Cannery, Mark sent me to San Francisco to research the perfect West Coast-style chowder,” says Raoult. “The trick is to use a sourdough freshly baked that day – anything less and the dish is impossible. The best part is tearing chunks off the loaf after you’ve finished the chowder inside!”
