White asparagus is harvested in springtime and commands a much higher price than the green asparagus. What really makes white asparagus so precious is the fact that it's grown in complete sun deprivation. It's carefully covered under thick soil so that no sunlight reaches it, which means the vegetable never gets a chance to turn green because no photosynthesis takes place. This high cost production process makes it limited in supply and thus white asparagus is being often associated as “edible ivory”.
