For over a decade, Grill 79 at China World Summit Wing, Beijing has been bringing Beijing exquisite cuisine, and it is now ready to wow its fans with a new concept.
Chef Zoe – the newly appointed Executive Sous Chef – is presenting her 'A Taste of Beijing' dégustation menu. As a Beijinger, she curated a culinary journey that represents her emotional bond with this city. She combined local Beijing ingredients and Western culinary techniques to explore the charm of the Capital and the childhood memories of its residents.

With over 20 years of rich culinary experience from her time with Michelin-starred and Black Pearl restaurants, Zoe – who is an outstanding female chef – brings a unique breath of innovation and exciting interpretation to redefine our gastronomic journeys. This set menu is now available at Grill 79 and will be revitalized every season to feature special ingredients.
This set menu is inspired by Chef Zoe’s childhood culinary memories in Beijing. The menu opens with an amuse-bouche titled ‘The Hongguo in the Memory’ which presents three decadent appetizers: Foie Gras Hawthorn, Crab Meat Tart, and Light Cheese Nuts with Jasmine Tea Infused Strawberry. It pays tribute to Chef Zoe’s favorite childhood treat – hawthorn (known to beijingers as hongguo).
The appetizer ‘The Story of Datoucai’ pairs Carabinero prawn and lobster royal with kohlrabi (known as datoucai in the Beijing dialect), which is commonly used for traditional Beijing pickles.
The soup ‘The Wisdom of Chinese Gastronomes’ features porcini consommé, matsutake and cordyceps flower to explore a profound mix of Chinese heritage and culinary finesse.
The main course includes two innovative dishes. ‘The Secret Chinese Pepper Oil’ is slow-cooked salmon paired with Beijing-style pepper oil, which is normally served with Dalu noodle.
‘The New Use of Beijing Sour Plum Drink’ pairs ‘Chocolate Wagyu’ Mayura beef with Beijing-style sour plum juice to keep the fresh taste in a unique style.
The dessert ‘The Forever Hawthorn Ice Popsicle’ is inspired by the Hongguo Ice Popsicle loved by many Beijingers. It features hawthorn sorbet and coconut parfait with a homemade hawthorn roll.
