Chi Fan For Charity Restaurant Highlight: On56

Taking place in BeijingHong Kong, and Shanghai for one night only (November 12), top restaurants across the city dedicate one table for 10 to the Chi Fan For Charity (sponsored by Epermarket) cause and put on a one-of-a-kind multi-course menu, which can be bought by any group of people. Afterwards, a legendary after party with free-flow drinks takes the celebrations long into the night.

This year’s line up is nothing short of stellar, including some of our favorite chefs and restaurants, from high-end classics and veteran chefs to up-and-coming movers and shakers. Over the next few days we'll be highlighting key dishes which will be featured on the menu of CFFC venues.

Today's sneak peak is from On56...

Mixed Grill Platter with Lobster, Rotisserie Chicken, Sausage, Dalian Snow Beef

Once again under the watchful eye of progressive Swiss-Canadian Executive Chef Rolf Knecht, On56 is putting on a classic steakhouse grill menu for CFFC diners. The self-professed “tree-hugger” chef is a stickler for sustainability, and puts premium traceable ingredients in his dishes.

“For me, this showcases what On56 does best: grilling and roasting. This is one of the purest ways of cooking – if you have inferior ingredients, there is nowhere to hide. We pride ourselves on the quality and traceability of our materials, using New Zealand lamb, chicken from Chongming Island and Snow Dragon beef from Dalian. My ultimate goal is to source everything on our menu from the very best sustainable and natural farms in China, and change people’s perception that locally grown ingredients are lesser than imported ones.”
