CÉ LA VI Shanghai, the highly anticipated luxury lifestyle restaurant and bar, has started welcoming guests once again at the iconic Bund 27. It offers a unique and unparalleled experience in the city through its combination of creative mixology, innovative cuisine, world-class entertainment and stunning vistas of the Shanghai Skyline.

Executive Chef Brian Chan has created new menus for the re-opening of CÉ LA VI Shanghai, showcasing his love of fresh ingredients, Asian flavors and modern twists through his nearly two decades of culinary experience in world-renowned 5-star hotel restaurants such as L’Atelier de Joël Robuchon at Four Seasons Hotel New York, Peacock Alley at the prestigious Waldorf Astoria New York and SHOOK! in the Swatch Art Peace Hotel Shanghai.

The menus features reimagined classics, as well as dishes inspired by his recent travels. The Hokkaido Scallop & Sea Urchin Donbri is a sexy take on a traditional Japanese rice bowl; miso and white soy cured scallops will top seasoned pearl barley, garnished with puffed wild rice, ikura, yuzu kosho and a briny sea urchin foam. 

The Crispy Pig Head Fritter, with all its unctuous goodness, is dressed with a piquant and herbaceous Vietnamese ravigote, paired with more fresh herbs and a soft-boiled quail egg. 

Their Sake Poached Black Cod elevates the delicious piece of fish to new heights; the dish is given texture from the quickly cooked hakusai, additional sea essence from the wakame and a bright rich finish from the yuzu beurre blanc. 

For those that are more carnivorous, Chef Chan has worked the flavors of one of his favorite Thai dishes into a beautiful sharing dish, Waterfall Beef – Bone-In Black Angus Short Rib. A beautifully marbled bone-in beef short rib is slow cooked and then glazed with sweet and tart tamarind, before being dressed with a delicious herb salad accented with chili, lime and the textures of toasted rice.
