Used to be a royal specialty, White Asparagus has been given the name of “Königliches Gemüse” – the Royal Vegetable in German, which is a rare delicacy only harvested in springtime and a symbol of spring’s arrival.
White asparagus should be grown in complete sun deprivation. This unique way of cultivation creates a sweet and tender stalk and prevents the green color of the regular asparagus variety, but the process is rather costly and laborious. That’s why this light and healthy spring vegetable has a very short growing season and is often more expensive than its green companion.
