Chang Jiao Tang Mian ('Long Foot Noodle Soup') is a mom and pop noodle operation situated on the ground floor of a lanehouse on Zhaozhou Lu. There is but one thing on the menu here: beef noodle soup (niurou tangmian 牛肉汤面). Composed of thick yet lightly textured, handmade noodles, fresh greens, a dab of beef lard and rich beef stock, each bowl of this noodle soup is a lesson in old school Shanghainese cooking.
