With autumn in full swing, SAIL at Hotel Indigo Guangzhou Haixinsha has launched a refreshed à la carte menu that celebrates the flavors of Lingnan with a modern twist.
Drawing on the best local and seasonal produce, the menu reinterprets traditional Cantonese cuisine with refined techniques and a touch of culinary creativity.
Leading the kitchen is Executive Chef Huang Xu, a native of Guangzhou with over 20 years of experience in luxury hotels and private dining.
His career has spanned high-profile openings and prestigious banquets, from state dinners to international corporate events, but his philosophy remains rooted in the everyday flavors of Canton.
“Each dish is about respecting the season and letting local ingredients shine,” says Huang.
Star of the Menu: Smoked Taiye Chicken
Among the highlights is the Smoked Taiye Chicken, a Guangzhou classic that dates back to the late Qing dynasty.
Marinated in master stock and delicately smoked with tea leaves, the dish layers savory depth with an aromatic finish of Longjing.
Its glossy brown skin, crisp bite, and tender meat embody the artistry of Cantonese cookery.
