The unveiling ceremony of the Michelin Guide Chengdu 2025 and the prestigious Michelin Gala Dinner were successfully held at the Ba Shu Grand Ballroom of Shangri-La Chengdu. The hotel’s exceptional service team delivered an impeccable, high-quality dining experience for the distinguished guests.
A Unique, Locally Inspired Welcome Ceremony
In the reception area of the Ba Shu Grand Ballroom, Shangri-La Chengdu’s banquet team created an extraordinary welcome experience full of Chengdu's charm. Guests were greeted by hosts dressed in traditional 'Qiao Hua Dan' (俏花旦) costumes, guiding them through a serene bamboo forest. Upon sitting down in bamboo chairs, guests were served a custom summer cocktail in a traditional 'Gai Wan' (盖碗) cup, setting the tone for an evening filled with Michelin-starred delights.
Seven-Star Brilliance Illuminates Shangri-La Chengdu
Shang Palace’s Executive Chinese Chef Tang Keli of Shangri-La Chengdu, specially invited by Michelin, collaborated with a group of esteemed Michelin-starred chefs. These included Chef Jiang Qiaomu from Tout Zao (Michelin One-Star Shanghai 2024), Chef Chen Mingmei from Yu Restaurant (Michelin One-Star Guangzhou 2024), Chef Lin Zihan from Anxiang (Michelin One-Star Hangzhou 2024), Chef Huang Jinghui from Dongfang Jingyan (Michelin One-Star Shanghai 2024), and Chef Yin Hao from Jingzhaoyin (Michelin Three-Star Beijing 2024). Together, they presented an unforgettable dinner experience in celebration of the Michelin Guide Chengdu 2025.
The Only Sichuan Dish on the Michelin Gala Dinner Menu
Of special note was the only Sichuan dish featured on the evening's Michelin Gala Dinner menu, expertly crafted by Chef Tang Keli of Shangri-La Chengdu’s Shang Palace.
The dish, 'Snowflake Beef with Guaiwei Sauce,' draws inspiration from 'Koi Playing in Lotus Pond,' a classic piece from the Chengdu Shu Brocade, an intangible cultural heritage of China. Chef Tang used the plate as his canvas, delicately arranging colorful ingredients to mimic the beauty of Shu Brocade, much like how artisans weave intricate patterns from vibrant threads.
The dish featured premium imported snowflake beef, Sichuan caviar from Ya’an, and lotus petals shaped into a koi design. The snowflake beef was cooked with Guaiwei, one of Sichuan cuisine’s 24 distinctive flavor profiles. This created a crispy, tender bite with a complex fusion of salty, sweet, spicy, sour, and savory notes, awakening the palate with a sequential and harmonious taste experience.
