Escape to Italy with The Portman Ritz-Carlton, Shanghai's new 'Road to Rome' five-course tasting menu – a chef’s table experience curated by Executive Sous Chef – Davide Mastrangeli

This modern interpretation of Roman dishes, paired with five mid-summer inspired cocktails shaken by Assistant Beverage Manager Louis Sun, allows diners to get to know the chef and bar team better – not only through interpretations and backstories of each dish and cocktail, but also through the open format where guests can enjoy “the show” of watching their food and drinks made and presented right before them. 


Road to Rome Menu Details 

Welcome Drink

Dopolovoro Organic Frizzante Bianco

Straw yellow frizzante wine with a silky and delicate perlage. Fine nuances of pear, green apple and acacia flowers on the nose. It offers a mouthfeel that has a good acidity, with an excellent balance.

Amuse Bouche

Selection of Canapés Paired with Peppermint Elixir

Anchovies / Black olives / Tomatoes / Beef Tartare / Porcini / Black Truffle

Chef’s Interpretation: Mari & Monto means “The Seas and The Mountains.” This Amuse-Bouche marries the gift of both worlds. An Anchovies and Black Olive Oil Tartelette is light and refreshing, embracing the sea flavors, while the beef tartare tartelette represents the taste of the mountain.

Prosciutto e Melone 2.0 Paired with Turin Melon Metamophose

Duck Prosciutto / Melon / Port Wine / Basil / Goat Cheese

Chef’s Interpretation: In summer, it’s time to refresh your palate. Prosciutto and Melone is the combination of sweet and savory that the Roman Empire has truly embraced – a salty component, like prosciutto, juxtaposes the juicy, sweet melon.

Gracing the dish with another sweet and savory element; goat cheese and port wine add a new twist. 

Pasta

Core de Roma Paired with Pinot Grigio

Egg / Pecorino / Guanciale / Pasta / Chicharron

Chef’s Interpretation: Traditional yet iconic, this Roman dish is made with simple, common ingredients that have made it a favorite all over the world.

For the citizens of Rome, carbonara is in their DNA, but to make it more unique and personalized, the chef decided to add a Siamese twist, topping it with Thai-style pork crackling. 

Main

Coast-line Jasmine Stuffed Baby Squid paired with Italian Tomato

Squid Ink / Tomato / Fennel

Chef’s Interpretation: In loving memory of the chef’s mother, this dish reminds him of when he was a teenager on summer holiday and cooked stuffed baby squid with his mom.

Patiently preparing the robust filling – through the stuffing process, seasoning and garnish – this dish represents a beautiful moment encapsulated.

Dessert

Pear and Chocolate Cake paired with Verona Coffee Martini

Chef’s Interpretation: Acceglio is a small town on top of the Alps, in the Piedmont region, 30 minutes from France – and the chef’s family summer holiday destination, surrounded by greenery, fresh air and nature.

Chocolate is a part of the Piedmont region cuisine, and delicious pears can be found around the town. Nearby his family holiday home there was a shop that made fresh pear and chocolate cake. In homage to that memory, he makes it with a modern twist.

With that I'm excited to bring the elevated slow food movement dining concept to Shanghai for the very first time."

Born and raised in Rome, Italy, Davide has that Italian sense of tradition, culture and – indeed – love for food.

The 'Slow Food Movement' dining concept was introduced to him when he was very young. Through time and the experience he gained on his culinary journey, he slowly realized that dining is not just about eating, but contemplating and being in the moment, trying to understand how each bite makes diners feel. 

Throughout the 'Road to Rome' dining journey, diners are encouraged to dine slowly and relish the world of authentic Italian cuisine. 


Assistant Beverage Manager Louis Sun

Born and raised in Shandong as an only child, Louis studied very hard, which blossomed into a degree in Hotel Management and Operation in Hangzhou.

Ultimately, he joined The Portman Ritz-Carlton, Shanghai, which remains the first and only hotel he has worked at throughout his entire six-year career.

Louis worked his way up from barback and has been recently promoted to Assistant Beverage Manager.

"My passion is meeting people from all walks of life, developing myself and conducting research on the beverage market so I can continue making the best possible drinks for our hotel and community guests. This is what makes me happiest and motivates me."
