Drawing inspirations from our surroundings in Guangdong and Chef Julien’s upbringing in Shanghai, Macau and Beijng ANISE strives to showcase dishes that are rich both in flavor and culture, using techniques that are native to these two unique cuisines and elevating them through Chef Julien’s time at Ultraviolet and Robuchon – creating a blend of French, Cantonese and Shanghainese Cuisine where respect for the environment and focus on sustainable agri-, horti- and aquaculture takes the high seat, working with smaller farmers and producers to showcase unique products of the highest quality while supporting small business owners and promoting a green and ethic dining experience where animal welfare and minimal impact on micro and macro environments are always on the top of our mind.
