Chefs Xiao Xiong and Mary are bringing back their burger pop-up “11PM” after a three-year hiatus. This time, they’re popping up at Charcohol and are collaborating with Gre3n founder Thames for a Thai-inspired burger, stacking lemongrass pork neck with coconut and pineapple salsa and pecorino romano. Burgers are 50rmb each and they are only making 100 burgers. It starts at 11pm at Charcohol.
The catalyst for the 11PM pop-up was to do something fun and unusual outside of their day-to-day jobs—one a celebrity chef, the other in high fashion. They built a cart and set up shop outside bars in the freezing cold, serving burgers to the masses. The last one was at EPIC, December 2016, and drew more than 300 people.
