Shanghai Native Chris Zhu dreams up a mystical + multi-course menu for a one-of-a-kind chef’s table experience. Chris used to be known as Doctor Zhu. But after 7 years in surgery he left the emergency room to pursue his passion in the kitchen. After attending the Cordon Bleu in Shanghai he helped open and served as the executive chef at wine bar + kitchen Bird and its cafe + cocktail sister Bitter. His mission is to marry classic culinary techniques with local Chinese flavors for food that evokes curiosity or nostalgia in his diners.
The series will spotlight his refreshing and singular take on fusion, flavor, and surprise, with each night featuring a unique multi-course menu sewn together by featured ingredients popping up in multitudes of ways. Zhu’s style is inventive, resourceful, and ambrosial - think Sichuan mala foie gras, mud crab claw croquettes, sumac meringue, shiso pesto.
