Ramen Kishu is a beloved Japanese noodle shop, specializing in tonkotsu and shoyu (soy sauce) broth ramen. Open late, the shop services a steady roster of inebriated Japanese businesspeople wisely padding their hangovers with bowls of noodles.
Although the namesake tonkotsu broth is popular, real conoisseurs know to order the shoyu bowl, which comes served with heaps (and we mean heaps) of scallions on top. The role of this scallion abundance is to flavor the soup, and they are not intended to be completely consumed. Be sure to order extras such as the fried chicken, kimchi and chashu (pork) rice bowl.
