Hotpot is big business in Chongqing. Over two millions people are employed by the hotpot industry in the dish's proverbial home, which is one to some 50,000 hot pot restaurants.
Bearing this in mind, it's not altogether surprising that the municipality has established a Hotpot Academy that opened its doors on October 27. The result of a partnership between the Chongqing Hotpot Association, the Chongqing Cuisine Association and the Chongqing Modern Vocational Training Academy, the school will offer applicants a three- to six-month program coasting an average of RMB 1,000 per student.
30% of students' coursework will be be "theoretical" while the remaining 70% focuses on the practicalities of hotpottery. Upon graduation, they will then receive a "certificate of some kind" that distinguishes them as hotpot masters.
It's unclear just how much theory and practical coursework could possibly be involved in a cuisine that requires diners to cook the food themselves at their own table, but whatever — still way cooler than Hamburger University.
