In our monthly series 'Getting Moderately Deep With... ' we ask a food vendor tough questions. Well, sort-of tough.

This month we meet Zhou, a sushi apprentice at a Japanese restaurant.

What's the first thing you thought when you woke up this morning?
I thought about how hungry I was. I only woke up because I was hungry – otherwise I wouldn't have [laughs].

What is your idea of the perfect day?
When I get to go home after work and play on my phone and then fall asleep without having to worry about anything.

Who is your best customer?
Since we haven't officially opened yet, I don't think I have one. Who is your worst customer? You! Just kidding [smirks].

How are you feeling today?
I'm feeling happy. I mean, why not? Though I'd be happier if you buy us a drink.

When and where were you happiest?
Definitely when I get my salary. I used to take my friends out to eat, but now I have to pay back my loans.

Which talent would you most like to have?
Skill in cooking Japanese food.

What do you consider your greatest achievement?
The fact that I bought a house.

If you could change one thing about your life, what would it be?
There's too many, and this is such an unrealistic thing to think about. I think having something to eat and clothes to wear is good enough for me.

What is your most treasured possession?
Money of course! You can basically buy anything – except for time.

What trait do you most value in a person?
Good morals.

What is it that you most dislike?
Having no money.

Which era of Beijing's history would you most like to have lived in?
Do you mind listing the eras? [laughs

Who is your hero?
[Zhou’s boss whispers to mention him] My boss, I guess? Though I think I admire everyone for having potential.
