The 1515 West Chophouse & Bar Launches Happy Hour & T-Bone Sets

The 1515 West Chophouse and Bar, the contemporary American-style restaurant at the Jing An Shangri-La, West Shanghai renowned for its vintage interior design, is bringing guests’ dining and drinking appreciation to another level with its new Happy Hour menu, designed by Bar Manager Ruslan Kaptsan, and T-Bone dinner set menu for two, crafted by Executive Sous Chef William Mahi.

Happy Hour Menu

Aiming to bring creativity and value back to the hotel bar scene, Ruslan has put on his mad scientist hat for the menu’s latest iteration. Utilizing equipment straight out of Advanced Chemistry, he is pulling out the rotovap, sous vide machine, Spinzall, hot plates, clarification gear and even an ultrasound machine to combine flavors, enhance the classics and test the palate’s boundaries.

But it’s not just about crazy creations, the focus is also on value, which is why 1515 West Chophouse and Bar is launching a daily happy hour from 5pm until late with cocktails starting as low as RMB40 net. You read that right, and there are more than 30 beverages spanning everything from classic cocktails – like Aperol Spritz, Daiquiri and Gimlet – to one-of-a-kind libations – like milk-washed Paper Planes and raspberry-infused Boulevardier aged in Champagne-region oak barrels.

Bonus, from 5-8pm, all drinks come with one slider, to feed the appetite while you calm the mind after a long day at work. Most drinks go for RMB60 net and, despite the wallet-friendly price, really showcase how creative hotel cocktails can be. 

Cocktail Menu

Outside of Happy Hour, Ruslan spent nearly a year perfecting the current themed cocktail menu that has the look and feel of a book. Inspired by movies, each of the signature cocktails come to life in menu form via 3D pop-up cutouts, highlighting each drink’s main elements.

We highly suggest the From Paloma Till The Dawn (RMB108), a cocktail inspired by the Robert Rodriguez movie From Dusk till Dawn. Beetroot purée is sous vide with tequila while mezcal is infused with habanero and jalapeño.

After clarifying lemon and grapefruit juice, then adding carbonation, all of the elements come together, dusted with homemade chili flake salt. The resulting balanced libation is clean and refreshing yet highlights the bold flavors, creating a layered sip of sweet and spice, smoke and citrus.

The Parfumer (RMB108) is a saccharine blend of Michter’s Kentucky Straight Rye Whiskey sous-vide with raspberries and white chocolate, combined with Mancino Rosso Amaranto Vermouth, Campari, Averna, bitters and in-house distilled orange essence. The tartness of raspberry and sweetness of the white chocolate make the Campari’s inherent bitterness more approachable in a booze-forward play on a Boulevardier that can be enjoyed by anyone.

Aside from the signatures, there are also twists on classic cocktails, with an emphasis on the old signatures, really bringing to the forefront the 1920s-50s era hotel bar vibe that developed the cocktails industry into what it is today.

The barrel-aged cocktails (of which there are five to choose from) are also each unique and oh-so-crushable in their own way. From a play on a Sazerac, aged in Texas oak, to a play on a Martinez, the pre-cursor to the Martini, with a mix of Botanist Islay Dry and Old Tom Gins plus Curaçao, Rosso and Dry Vermouths and a Luxardo cherry.

After all the booze, 1515 West also has you covered on the food front, with the T-Bone Dinner Set Menu for Two.

Marked down to just RMB798 net, you and your partner can indulge in creamy Mushroom Soup for two, a melt-in-your mouth 600-gram Black Angus Wagyu M5 Dry-Aged T-Bone with lusciously buttery mashed potatoes and a decadent New York-style cheesecake surrounded by a spiralized dark chocolate dome.

Meat lovers will be delighted by the restaurant’s generous portioning philosophy. The restaurant features The 1515 West signature brand Australian beef, dry-aged for 45 days. The house butcher presents signature prime cuts, which are cut and weighed on an old-fashioned scale on the table and sent straight to the grill.
