The original branch of Ramen Tomikawa (とみ川) hails from Furano, Hokkaido, where it boasts Michelin Bib Gourmand status. The Shanghai version Ramen Tomikawa is embodies the same style, but simplified. For Shanghai standards, this is very good ramen indeed, with a thick, porky broth, fresh buckwheat noodles, marinated soft-boiled eggs and juicy layers of chashu (pork.)
