Grand Hyatt Guangzhou Reveals Fresh, Creative Menu at G Restaurant

With renovations complete at Grand Hyatt Guangzhou’s G Restaurant, a new menu has been carefully crafted by Executive Chef Felix Lee. Born in Taiwan, Chef Lee brings over 25 years of culinary expertise to the restaurant – he started his career at Le Cordon Bleu in Paris and has worked his way to the top in various restaurants and hotels. He has also had the pleasure of working at various Hyatt locations in Asia including Taipei, Chengdu and Xi’an.

Chef Lee specializes in using traditional Western cooking methods coupled with unique international ingredients and seasonings. 

When speaking with Chef Lee, it is clear that he has thoughtfully prepared the perfect meal options for couples, families, large groups or just for diners at a business meeting.  

Here we introduce some highlights from the new menu below:


Salmon Trio

This scrumptious appetizer comes with salmon prepared in three different ways. The first piece of salmon is seared on the bottom, tataki-style with dollops of miso cream and shreds of ice lettuce. The second is refreshing tartare take, the raw salmon is diced and paired with finger lemon, crispy eel, caviar and fennel salad. The third creation is composed of morsels of smoked salmon surrounded in a bed of vodka cauliflower mousse.

Onion Veloute

This entree is like the refined older cousin of French onion soup. All the same flavors are at play here but slightly different ingredients are used. There’s onion, Emmental cheese foam, croutons for texture and even a poached free-range egg, which melds nicely with all the savory flavors.  

Smoked Bell Pepper Risotto 

If you find risotto a bit boring, this smoked bell pepper risotto will have your tongue wagging as it’s topped with duck tongue and a sprinkle of nori. 

48-Hour Slow-Cooked Australian Beef Short Rib 

Slowed cooked for two days at 60 degrees Celsius then smoked over lychee wood, this Australian beef is absolutely tender and fragrant. Make sure to try dipping it in the accompanying balsamic sauce or snack on sauerkraut in between bites.

Strawberry Ice Cream Sundae 

Not only is this dessert a masterpiece to look at, but it’s also perfect for berry lovers. Mashup the toffee cream, strawberry coulis, caramelized nuts and fresh berries, then take an indulgent bite. You can sip the Rossini on the side or go wild and also pour it into the glass cup. Make sure to order ahead as the dessert is made to order and takes about half an hour.

Caramelized Banana Napoleon

All the perfect ingredients that go with bananas: caramel, custard and chocolate ice cream are incorporated in this decadent treat. 

Passionfruit Souffle

This lightly passionfruit-flavored souffle is served with raspberry coulis, vanilla sauce and ginger ice cream.
