Highlights include Homemade Charcuterie and Rillettes, Beef Tongue and Duck Liver Terrine, Escargots in Shell with Green Butter, Tomahawk Steak, The Sea Food Pot, Lemon Tart and more – with picturesque creations reflecting the bounty of tasty ingredients.

The New Menu
Beef Tongue and Duck Liver Terrine
The combination is a harmonious take on both ingredients; Chef Mahi’s rendition is pressed with homemade duck liver mousse and thin slices of six-hour poached beef tongue. The smooth, rich texture of the mousse married together with the tender beef tongue allows each bite to burst with a rich aroma and flavor.
The impressive signature 1.2kg-1.5kg Wagyu Beef MB 5 Tomahawk Steak is sourced from Stanbroke farms in Queensland, Australia. Famed for its perfect marbled cut, the tomahawk steak is aged between 30-45 days to form a premium flavor and texture. The result is a matured meat of sublime texture and distinctive sweetness, with melt-in-your-mouth appeal.
The SeaFood Pot
Fresh seafood never fails to delight. A combination of seafood and lobster broth, encased with bread dough and oven-baked, allows the flavors to infuse. This ultimate seafood pot contains cod fish, shrimp, Boston lobster, mussels, potatoes and more. Guests can also pair the dish with Rouille Source to complete an authentic sharing feast.
For the sweet finale of the well-composed meal, order the traditional lemon tart, paired with crispy meringue and lemon sorbet, topped with grated citrus zest. The gently melting sorbet and the creamy, gooey interior mixed with the crunchy meringue slowly explodes in your mouth.
1515 Homemade Pate | Rillettes | Terrine
The 1515 West has unveiled its new line of homemade pates, rillettes and terrines, combining high quality ingredients with traditional French recipes to create the superior taste and a rich, gentle aroma. In addition, Chef Mahi has bottled some unique pate ingredients in jars, the texture of which mingles with slow cooked pork and confit duck. The terrines, rillettes and pate are all made in-house and bottled to be available for both dining guests and direct purchasing.
1515 Homemade Charcuterie
A great variety of high quality and authentic cold cuts are prepared by Chef Mahi, specially handcrafted using original recipes and the freshest ingredients. All cold cuts are made in house, and the meats are cured for anywhere between 24 hours and 12 days, before being marinated, wrapped and finally hung to dry for a minimum of 40 days. They undergo stringent checks by the chef daily to ensure the success of the drying process to promise exquisite taste and texture in every bite.

Meat lovers will be delighted by the restaurant’s generous portioning philosophy. The restaurant features The 1515 West signature brand Australian beef, dry-aged for 45 days. The house butcher presents signature prime cuts, which are cut and weighed on an old-fashioned scale on the table and sent straight to the grill.
The 1515 West Bar is decorated in a classic New York style and provides views of the piazza and the former residence of Chairman Mao Zedong. It offers various beverage selections of classic and distinct spirits from which a team of skilled bartenders produce premium drinks and cocktails for guests.
