Shenzhen is home to multiple steakhouses, but how many do you know that specialize in prime rib? Easily considered one of our favorite cuts of beef, prime rib is a type of classic roast beef made from the beef rib primal cut, usually roasted bone-in and served with a tasty reduction called au jus, a sauce made from the drippings.

Hailing from Los Angeles, chef and owner Nick Siu took his love for American-style dining and founded the first Westwood location in China back in 2010. This branch, Westwood Carvery, can be found in the heart of Lan Kwai Fong in Hong Kong and has served high-quality cuts for almost a decade. Although Chef Siu has accumulated a wealth of restaurant experience, he and his team continuously strive to adapt and create a unique dining experience for guests.

1. Tender Cuts of Prime Rib Roasted Over Fragrant Lychee Wood

Soft, tender and juicy – that’s exactly how the meticulous chefs at Westwood Fire & Smoke serve up their signature USDA-certified prime rib dish. Accompanied by rustic mashed potatoes and a hot bowl of au jus for drizzling, this is a dish crafted with care. The marbled cut of meat is slow roasted over lychee wood for nine to 12 hours and hand-carved to order. With such attention to detail, Westwood is truly no stranger to the steakhouse game. “Everyday our chefs and grill masters sample and take pictures of the roast for quality inspection,” Blair Tsang, general manager at Westwood, tells us.

Enjoy a glass of wine or two, and find which one pairs best with your meal. Westwood uses a nifty gadget called a Coravin, which can pour a glass of wine without even uncorking the bottle! This ensures the wine is fully preserved, and allows you to sample different wines with ease. Don’t feel like drinking? No worries, we tried a refreshing hand-squeezed lemonade and the balance of sweet and sour was spot on. Perfect as a palate cleanser in between bites of savory roast. 

3. Select the Perfect Steak Knife

You may be surprised by how important the role a steak knife is in your dining experience. Westwood is fully aware of this, which is why as your meal is about to begin, the server will present you with a selection of optimally designed knives to choose from. Whether its form, function or both you’re looking for – you can ensure you have the right cutlery to slice into your gorgeous, juicy steak. Note: For Shenzhen steak connoisseurs, you can even bring your own knife! 

4. More than ‘Meats’ the Eye

If meat is a little too heavy for your liking, Westwood has some delectable seafood dishes. We’d highly recommend the Fisherman’s Seafood Pasta, which consists of Alaskan king crab, tiger prawns, mussels, clams and bacon simmering in a umami-rich, no salt added, sauce. The seafood is fresh and abundant on the plate!
