Restaurant Recipes: 5 steps to make Sproutworks roasted heirloom beet salad

Famous for being one of the best places to get healthy food on the quick, Sproutworks’ head Chef Leo showed us how you can whip up this delectable fresh salad perfect for lunch, dinner or summer parties.

Serves 4

Salad
400g roasted red chioggia beets
400g roasted golden beets 
400g grapefruit slices
320g orange slices
20g crushed walnuts
20g goat cheese
3 sprigs Italian parsley
16 mixed sprouts or salad leaves

Dressing
60ml olive oil
30ml lemon juice
20ml white vinegar
1 tbsp honey
1 tsp Dijon mustard 
Salt and pepper (to taste)

 

Step 1: Wash and peel red and golden beets. Bake at 200 C (390 F) for 20 minutes till soft, and remove peel by hand. Cut red beets into 6 pieces, golden beets into 4 pieces.

Step 2: Slice citrus into segments, roughly chop the parsley, then mix in a bowl with the other dry ingredients

Step 3: For the dressing, put all wet ingredients into a mixing bowl or jar. Whisk, blend or shake the jar to emulsify the mixture for a creamy textured dressing.

Step 4: Toss and mix the dressing with the dry ingredients.

Step 5: Serve immediately or place in refrigerator till later use.
