Another day, another big new restaurant opening in Shanghai, this time the hotly anticipated Colca, from prolific restaurateur Eduardo Vargas. Vargas' other projects include South American spot Azul, and rotisserie chicken delivery concept Brasa, to name but a few.
A nod to Vargas' own Peruvian heritage, Colca serves a seafood-centric menu with flavors from the region – think colorful ceviches, tiraditos, and quinoa. At the bar you'll find pisco-led cocktails – another Peruvian specialty. Tucked into a new complex at Hengshan Lu, the restaurant boasts high-ceilinged interiors and a rather glam outdoor terrace.
It won't just be Vargas behind the wheel, Spanish Chef Oscar Beltran has been named as executive chef and partner at Colca. Having worked at under the Roca brothers at Barcelona's famed three-Michelin star restaurant El Celler de Can Roca. He was also a finalist in the CCTV 2 Master Chef competition.
