Adjacent to Hongqiao State Guest Hotel, Amazing Chinese Cuisine is operated in a detached villa with only five private rooms. With its capacity of accepting a few dozens of diners, it has nevertheless more than 20 suppliers to deliver daily raw ingredients in apparently small quantities.
Street sign not so big, but at the entrance, wall-sized thermostat wine cabinets can be seen. From the staircase up to the private rooms on the second floor placed boxes of cigars, bird’s nests, fish maws deposited by clients.
As a tiny eaterie, there aren’t many rules. You may order set menu or ala-carte, depending on what raw materials can be available for the day. Old clients may make a reservation one day in advance to facilitate the chef for the preparation. Chinese Baijiu and single malt whiskeys are listed together, while Kung Fu tea favored by Teochew people has wide varieties.
