We at That’s are big fans of all meats slow-cooked, so you could imagine our excitement when we learned that Head Chef James Shao is a big advocate for the slow-cooking process. With super tender wagyu beef imported straight from the Land Down Under, Chef Shao prepares his steaks in the best way possible (by our assessment, anyway), placing them in a machine that slow cooks from between six to 24 hours to create the optimal tender feel. Many of the meat-focused dishes at Aroma make great use of the slow cook method, with items like salmon also getting the slow-cooked treatment. As Hell’s Kitchen star Chef Gordon Ramsey will tell you, slow-cooked meat has “that nice, little intensity” to take your meal to the next level.

3. Stunning City Views

Who doesn’t like dinner with a view? We sure do, and Aroma offers every table the best view in the house with grand glass windows giving patrons a stunning vantage point to gaze on New Canton. Raised in Foshan, Chef James Shao has nearly 10 years of hands-on experience in the kitchen. He got his start working in both Chinese and French restaurants while living abroad in France, including a stint at the one-Michelin starred Les Climats in Paris. But what’s so intriguing about this 28-year-old head chef is his rapid ascent in the culinary world, working at The Ritz-Carlton, Shanghai and Park Hyatt Guangzhou before joining the fray at Conrad Guangzhou’s Aroma restaurant. Chef Shao’s kitchen staff, comprised of young and ambitious minds, is eager to please Aroma’s hungry patrons, going above and beyond the call to deliver one-of-a-kind dishes.
