Home cooking: Cheesecake with mixed berry compote

There is something special about a cheesecake. Made with rich ingredients that are bound to leave you craving more, cheesecakes are the stuff of lush dreams. Combine it with a crust made from the signature Doubletree by Hilton chocolate chip cookies and you’ve got a recipe that will delight and impress.
 

Ingredients:

450g cream cheese   

140g sugar                 

15g cornstarch

4 eggs, beaten

50g milk

90g sour cream

 

Berry compote for topping:                  

160g black berries

120g cranberries

80g raspberries

80g blueberries

120g raspberry, pureed

 

Crust:      

270g Doubletree by Hilton chocolate chip cookies, finely crumbed, or a suitable substitute like graham biscuits             

 

Decoration:             

Blocks of cream cheese

Mint leaves and chocolate sticks

 

To make the cheesecake:

1) Take all cheesecake ingredients and put them in a mixing bowl. Switch the electric mixer to high and blend for about 15 minutes till all ingredients are well combined.    

2) Press broken cookies evenly into the bottom of a cake ring (diameter of 16 centimeters). Set aside for a few minutes.

3) When the crust has had some time to solidify, pour in the cheesecake mixture.        

4) Take a baking tray and fill it with some water. Put the cake ring on the tray and bake at 140 degrees Celsius for an hour.

5) Remove and refrigerate immediately for a few hours.              

 

To make the compote for the topping:

1) In a pot, put the raspberry puree and boil it for a few minutes, then add all the berries.

2) Once the berries are soft, remove from heat and leave to cool.

 

To decorate the cheesecake:

1) Remove cheesecake from fridge. Cut a block of cream cheese into small square pieces. Position some sideways and others upright.

2) Spoon on berry compote. Add mint leaves and chocolate sticks. 3) Cut into eight slices and serve immediately.
